Fethiye'nin yöresel mutfağı üzerine şimdiye kadar bütünsel bir çalışma yayımlanmamıştır. Kitabımızın amaçlarından biri de yerel mutfak kültürünün kayıt altına alınması ve gelecek kuşaklara aktarılmasıdır. Fethiye'nin gelenek ve görenekleri, yaşam tarzları zaman içinde etkileşimde olduğu topluluklarla değişim göstermekle birlikte yerel yemeklerini koruyabilmiştir. Gelecek kuşakların da bu uyumu sağlaması, yerel besinleri yaşamlarına uyarlayabildiği sürece geleneksel yemeklerin devam etmesi mümkündür. Bu nedenle yerel kimliğin korunması ve devamlılığının sağlanmasında yerel mutfağın sürdürülebilir olması önemli bir unsurdur. Genç kuşak artık geçmişte olduğu gibi, "Doğranmış soğanları zeytinyağında kavur, yıkadığın sebzeleri içine aktar, pişirip ye, karnın doydu kalk," kuşağı değildir. Bilinçli beslenen yeni nesil, yediklerine, içtiklerine dikkat etmekte, kalorisini hesaplamakta, estetik ve sunuma önem vermektedir. Onlar, yerel otları buharda az pişmiş olarak tüketse de anneanne ve babaanne mutfağında pişen geleneksel yemeklerin cazibesine kapılmaktan kendilerini kurtaramamaktadır. A holistic study on the local cuisine of Fethiye has not been published so far. One of the aims of our book is to record the local cuisine culture and transfer it to future generations. Although Fethiye's traditions, customs and lifestyles have changed with the communities it interacts with over time, it has been able to preserve its local cuisine. As long as future generations can adapt to this adaptation and adapt local foods to their lives, it is possible for traditional foods to continue. For this reason, the sustainability of local cuisine is an important factor in the preservation and continuity of local identity. The young generation is no longer the generation of "fry chopped onions in olive oil, add washed vegetables, cook and eat, get up when you are full" as in the past. The new generation eats consciously, pays attention to what they eat and drink, calculates calories, and gives importance to aesthetics and presentation. Even though they consume local herbs steamed and undercooked, they cannot save themselves from the temptation of traditional dishes cooked in grandmother and grandmother's kitchens.
